The BF and I have a thing for polenta and will eat it as a side with anything - breakfast, dinner, dessert.  Whatever.  So when my friend M said she had a polenta lasagna recipe, my mind exploded a little bit.  What was best about it is how easy it was.  Just a few ingredients and 20 minutes in the oven.

Here’s all you need:

  • 1 tube of pre-cooked polenta
  • Ball of fresh mozzarella
  • 1/2 cup of ricotta 
  • 2 tbsp of pesto
  • 2 cups of marinara sauce
Mix the ricotta and pesto.  Slice the polenta into thin layers and line the bottom of a baking pan.  Top the polenta with the ricotta/pesto mixture, top with marinara sauce, and then top with slices of the mozarella.  Bake at 350 for 20 minutes.

Of course I had to make it difficult - I couldn’t find the pre-cooked tube of polenta, so I ended up buying instant polenta and whipped some up on the stove.  One box, 2 litres of water.  So - bottom line - it was easy, but I made way way way too much polenta and instead of being easily sliced it was goopy and sticky.  My solution?  Rolling it out under wax paper with a roller.  And it worked pretty well.

Also, because I made so much polenta I decided to double the recipe and make two layers of the dish.  (I still have enought o make a second lasagna)  The mozzarella ball did not last long enough, so I used shredded mozzarella to make up the difference.  

Why is this a lonely lasagna though?  The guy is working late again unexpectedly - and I’m here with enough lasagna to feed an Italian family.
